  • 4 to 5 lb. boneless pork loin roast (double loin), rolled and tied
  • 1 jar (12 oz.) apricot preserves
  • 1/4 c. light corn syrup
  • 3 Tbsp. cider vinegar
  • 1/2 tsp. dry mustard

Directions

    Place roast rack in shallow roasting pan.

    Insert meat thermometer so bulb is in center of thickest part of roast. Roast uncovered in a 325° oven for 2 to 2 1/2 hours or until meat thermometer registers 160°.
