  • 6 c. defatted chicken broth
  • 1/4 c. dried mushrooms
  • 1 tsp. olive oil
  • 2 c. thinly sliced Vidalia onions
  • 1/2 c. finely minced sage
  • 1 c. dry white wine
  • 2 Tbsp. fresh Italian parsley, minced
  • freshly ground pepper

    Heat 1 cup broth and pour over mushrooms in small bowl.

    Soak mushrooms 30 minutes; strain and reserve liquid.
