- 1 medium potato
- 3/4 tsp. salt
- 1 (6 oz.) can tomato paste
- 1 1/2 c. chicken broth
- 1 c. cut water cress
- 1 Tbsp. butter
- 1 slice carrot
- 3 c. water
- 2 Tbsp. raw rice
Directions

1Cook onion slowly in butter until delicately browned.

2Add everything but water cress.

3Simmer, stirring occasionally, for 45 minutes.

4Add water cress and boil 5 minutes longer.

5A piece of water cress makes a nice garnish.

6Goes well with roast beef.
