- 4 eggs
- 1 lb. powdered sugar
- 1 tsp. lemon extract
- 1 Tbsp. anise seed
- 1/2 tsp. anise oil
- 4 1/2 c. flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 3 to 4 Tbsp. milk
Directions

1Beat eggs until light.

2Stir in sugar, beat until thoroughly combined.

3Add lemon extract, anise seeds and anise oil.

4Mix and sift together flour, baking powder and salt.

5Add to egg mixture and mix thoroughly.

6Add 3 to 4 tablespoons milk or enough to get dough to stay together enough to roll.

7Chill 1 hour.

8Roll on floured board to 1/2-inch thick and mark with springerle roller. Cut squares and set on cookie sheet to dry overnight or 8 to 10 hours.

9Bake at 350° for 20 to 30 minutes or until browned on bottom.

10Store in covered jar.

11Makes 3 dozen.
