- 3 c. sliced zucchini
- 3 c. sliced yellow squash
- 1/4 c. chopped onion
- 1 c. shredded carrots
- 1 can cream of chicken soup
- 1 c. low-fat sour cream
- 1/4 lb. oleo
- 1 (8 oz.) pkg. Pepperidge Farm stuffing mix
Directions

1Steam the zucchini and squash for 10 minutes.

2Combine the soup and sour cream; stir in the carrots.

3Fold in the steamed vegetables.

4Melt 1 stick of oleo; add to the stuffing mix.

5Line dish with 1/2 of the stuffing mix.

6Spread vegetables over stuffing.

7Cover with the rest of the stuffing.

8Sprinkle with Parmesan cheese.

9Bake in a 350° oven for 30 minutes.
