Squash Apple Scallop

  • 1 medium butternut squash
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1/4 c. packed brown sugar
  • 2 Tbsp. corn syrup
  • 2 tsp. grated orange rind
  • 1 c. boiling water
  • 1 medium onion
  • 2 apples, peeled, cored and sliced in 1/2-inch rings
  • 2 Tbsp. orange juice
  • 2 Tbsp. butter or margarine

    Peel squash, slice in half lengthwise and remove seeds.

    Cut into slices.

    Place in a saucepan with water and salt.

    Cover and cook for 15 minutes; drain.

    Layer squash and apple slices in a 1-quart greased casserole.

    Combine sugar, corn syrup, orange juice and orange rind.

    Pour over squash and apples.

    Dot with butter.

    Cover and bake at 350° for 20 to 25 minutes, or until apples are tender.
