Squash Bisque

Ingredients

  • 4 c. peeled and seeded yellow squash
  • 1/2 c. celery, chopped
  • 1/2 c. onion, chopped
  • 2 apples, cored and diced
  • 1 medium size potato, diced
  • 2 carrots, diced
  • 1/2 tsp. Italian seasoning
  • 2 c. chicken stock or more to suit

Directions

    Cook all of ingredients until tender.

    Run through food mill or puree in blender until very creamy in texture.

    If soup is too thick at this point, add more chicken broth or milk.

    Garnish with croutons or other seasonings to taste.
