- 4 c. peeled and seeded yellow squash
- 1/2 c. celery, chopped
- 1/2 c. onion, chopped
- 2 apples, cored and diced
- 1 medium size potato, diced
- 2 carrots, diced
- 1/2 tsp. Italian seasoning
- 2 c. chicken stock or more to suit
Directions

1Cook all of ingredients until tender.

2Run through food mill or puree in blender until very creamy in texture.

3If soup is too thick at this point, add more chicken broth or milk.

4Garnish with croutons or other seasonings to taste.
