Ingredients
- 3 Tbsp. margarine
- 1 c. chopped onion
- 1/4 c. chopped carrots
- 4 medium potatoes, peeled and cubed
- 2 large acorn squash, peeled and cubed
- 4 c. chicken stock
- 1/2 c. heavy cream
- 1/2 c. milk
- salt and white pepper to taste
- cayenne to taste
Directions

1Melt margarine.

2Add onion and carrot.

3Sprinkle lightly with salt and pepper.

4Cover pot and saute for 10 minutes, until tender. Add potatoes, squash and stock.

5Simmer over low heat for 25 minutes or until tender.

6Put mixture in blender and puree until smooth.

7Return to pot.

8Add cream and milk.

9Cook until heated. Sprinkle with salt, white pepper and cayenne to taste.
