  • 4 summer squash
  • 6 to 8 slices bacon
  • 1 green pepper
  • 1 tomato, chopped fine
  • 1 onion, chopped fine
  • 1 c. shredded Cheddar cheese

Directions

    Cook bacon until crisp.

    Cook squash 6 to 8 minutes until tender, but not too soft.

    Cut in half lengthwise and scoop out and discard seeds.

    Mix pepper, tomato, onion, bacon and Cheddar. Fill squash halves (boats); dot with butter and bake 20 minutes at 400°.

    Serves 8.
