- 4 summer squash
- 6 to 8 slices bacon
- 1 green pepper
- 1 tomato, chopped fine
- 1 onion, chopped fine
- 1 c. shredded Cheddar cheese
Directions

1Cook bacon until crisp.

2Cook squash 6 to 8 minutes until tender, but not too soft.

3Cut in half lengthwise and scoop out and discard seeds.

4Mix pepper, tomato, onion, bacon and Cheddar. Fill squash halves (boats); dot with butter and bake 20 minutes at 400°.

5Serves 8.
