Squash Boats

Ingredients

  • 6 medium squash
  • 1 c. chicken broth
  • 2 Tbsp. margarine
  • 1 small onion, chopped
  • 1/2 c. Cheddar cheese
  • 1 chicken bouillon cube
  • 6 or 8 crackers
  • pepper and salt to taste

Directions

    Boil squash in chicken broth until tender.

    Saute onions in margarine.

    Cut squash in half.

    Scoop out of boats and add onion. Add bouillon and seasonings and cook for 5 minutes.

    Add cheese and cracker crumbs.

    Reserve enough cheese to top each boat.

    Fill boats with mixture and top with cheese.

    Bake at 400° for 10 minutes.
