- 6 medium squash
- 1 c. chicken broth
- 2 Tbsp. margarine
- 1 small onion, chopped
- 1/2 c. Cheddar cheese
- 1 chicken bouillon cube
- 6 or 8 crackers
- pepper and salt to taste
Directions

1Boil squash in chicken broth until tender.

2Saute onions in margarine.

3Cut squash in half.

4Scoop out of boats and add onion. Add bouillon and seasonings and cook for 5 minutes.

5Add cheese and cracker crumbs.

6Reserve enough cheese to top each boat.

7Fill boats with mixture and top with cheese.

8Bake at 400° for 10 minutes.
