Ingredients
- 1 1/2 c. unsifted flour
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 eggs
- 3/4 c. sugar
- 1/2 c. oil
- 2 tsp. vanilla
- 1 1/3 c. summer squash, coarsely shredded, lightly packed
Directions

1Preheat oven to 350°.

2Grease a 9 x 5 x 3-inch loaf pan.

3Mix dry ingredients, except sugar, thoroughly.

4Beat eggs until frothy; add sugar, oil and vanilla.

5Beat until lemon colored, about 3 minutes.

6Stir in squash.

7Add dry ingredients; mix just until dry ingredients are moistened.

8Pour in loaf pan.

9Bake for 40 minutes or until toothpick inserted in center of loaf comes out clean.

10Cool on rack.

11Remove from pan after 10 minutes.

12Makes 1 loaf or 16 slices.
