Squash Casserole

Ingredients

  • 2 1/2 lb. fresh yellow squash, do not peel
  • salt and pepper
  • 1 stick oleo
  • 3/4 c. chopped onions
  • 15 Ritz crackers, crumbled
  • 2 eggs, beaten
  • 1 c. sharp cheese, grated fine
  • 15 Ritz crackers for top

Directions

    Melt 3/4 stick of oleo and saute onion in it.

    Slice and cook squash until tender.

    Drain squash and mash real good.

    Add onion, 15 Ritz cracker crumbs, eggs, seasoning and cheese; mix well.

    Put into 2-quart casserole.

    Melt the 1/4 stick of oleo, 15 more Ritz crackers, crumbled and sprinkle on top.

    Bake at 350° for 35 minutes.
