Squash Casserole

Ingredients

  • 2 lb. cooked squash, drained and mashed
  • 2 medium carrots, grated coarsely
  • 1 can cream of chicken soup
  • 1 onion, chopped fine
  • 1 small jar pimento
  • 1/2 pt. sour cream
  • 1 stick margarine
  • 1 pkg. Pepperidge Farm herb seasoned dressing

Directions

    Melt margarine; mix with dressing.

    Put all but 1 cup of dressing in bottom of an 8 x 11-inch baking dish.

    Mix the squash, carrots, soup, onion, pimento and sour cream; pour over dressing. Top casserole with reserved dressing.

    Bake at 350° until casserole is hot and bubbly.

    Will serve 10 to 12.
