Squash Casserole

  • 1 medium onion, chopped
  • 2 lb. yellow squash
  • 1 c. grated cheese
  • 1 c. cracker crumbs
  • dash of black pepper
  • 3 tsp. butter
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 1 egg, beaten

Directions

    Cook squash and onion until tender.

    Remove from heat, drain off any excess liquid.
  3. 3
    Then mash squash and onions; add salt, pepper and butter.

    Add cracker crumbs, half of the cheese, milk and egg.

    Stir until well blended.

    Pour into greased casserole dish.

    Bake at 350° until set, about 45 minutes, sprinkle rest of cheese on top and return to oven until melted and lightly browned.
