- 1 medium onion, chopped
- 2 lb. yellow squash
- 1 c. grated cheese
- 1 c. cracker crumbs
- dash of black pepper
- 3 tsp. butter
- 1/2 tsp. salt
- 1/2 c. milk
- 1 egg, beaten
Directions

1Cook squash and onion until tender.

2Remove from heat, drain off any excess liquid.

3Then mash squash and onions; add salt, pepper and butter.

4Add cracker crumbs, half of the cheese, milk and egg.

5Stir until well blended.

6Pour into greased casserole dish.

7Bake at 350° until set, about 45 minutes, sprinkle rest of cheese on top and return to oven until melted and lightly browned.
