Ingredients
- 3 lb. yellow squash
- 1/2 c. chopped onion
- 1 c. cracker meal or bread crumbs
- 2 eggs
- 1 stick butter
- 2 Tbsp. sugar
- 1 tsp. salt
- 1/2 tsp. black pepper (salt and pepper may be increased to suit taste)
- 1 c. Velveeta cheese, shredded
Directions

1Wash and cut up squash.

2Boil until tender, drain, then mash. Add all ingredients.

3Pour into baking dish.

4Sprinkle top with cracker meal or bread crumbs.

5Bake in 375° oven for 45 minutes or until brown on top.
