  • 2 c. cooked squash, drained and mashed
  • 1 can cream of mushroom soup
  • 1 c. sharp Cheddar cheese, shredded
  • 1/2 c. chopped onion
  • salt and pepper to taste
  • 1 c. cracker crumbs, divided
  • 1/2 c. melted butter
  • 2 eggs

Directions

    Mix squash, soup, eggs, cheese, onion, seasonings and 1/2 of cracker crumbs.

    Top with remaining crumbs and drizzle melted butter on top.

    Bake uncovered at 350° for 30 minutes in 1 1/2 or 2-quart casserole dish.
