- 2 lb. summer squash
- 1/2 c. chopped onion
- 1 c. shredded carrot
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 (8 oz.) pkg. seasoned stuffing mix
- 1/2 c. oleo
Directions

1Cook sliced squash and onion in boiling water for about 3 minutes.

2Squash should be crisp.

3Drain.

4Combine soup and sour cream.

5Stir in carrots, squash and onion.

6Add salt to taste. Combine stuffing mix with melted oleo.

7Spread half the stuffing mix in the bottom of a 12 x 7 x 2-inch dish.

8Spoon vegetable mixture on top of stuffing.

9Sprinkle rest of stuffing on top. Bake at 350° for 25 to 30 minutes or until hot and bubbly.
