Squash Casserole

Ingredients

  • 2 eggs
  • 1 c. onion
  • 2/3 c. cubed cheese
  • 1 pkg. Stove Top dressing
  • 3 c. yellow squash
  • 1 can Ro-Tel tomatoes, drained
  • 1 c. grated sharp Cheddar cheese

Directions

    Boil squash and sliced onion until tender; drain and mash. Add cheese, tomatoes and eggs.

    Prepare dressing mix as directed on box and reserve 1/2 cup dry mixture to sprinkle on top of casserole.

    Add squash mixture to dressing mixture.

    Place in sprayed dish.

    Sprinkle on dry dressing.

    Bake at 425° (covered) for 30 minutes.

    Uncover casserole and sprinkle with grated cheese.

    Return to oven, uncovered, for 15 minutes or until brown.
