Squash Casserole

Ingredients
- 2 eggs
- 1 c. onion
- 2/3 c. cubed cheese
- 1 pkg. Stove Top dressing
- 3 c. yellow squash
- 1 can Ro-Tel tomatoes, drained
- 1 c. grated sharp Cheddar cheese
Directions

1Boil squash and sliced onion until tender; drain and mash. Add cheese, tomatoes and eggs.

2Prepare dressing mix as directed on box and reserve 1/2 cup dry mixture to sprinkle on top of casserole.

3Add squash mixture to dressing mixture.

4Place in sprayed dish.

5Sprinkle on dry dressing.

6Bake at 425° (covered) for 30 minutes.

7Uncover casserole and sprinkle with grated cheese.

8Return to oven, uncovered, for 15 minutes or until brown.
