Squash Casserole

Ingredients

  • 1 lb. yellow squash
  • 1/2 stick margarine
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 onion (size of an egg)
  • 2 eggs
  • 14 saltine crackers, crushed
  • 1 c. grated sharp cheese

Directions

    Cut squash and chop onion; season with salt and margarine. Cook until well done.

    Mix all ingredients together and put in a greased casserole dish.

    Save enough cheese and crackers to cover top of casserole.

    Bake at 350° for 45 minutes to 1 hour.

    When solid, cover with reserved cheese and crackers and brown slightly.
