  • 2 lb. squash, cooked and drained
  • 1 carrot, grated
  • 1 onion, chopped or grated
  • 1 small jar chopped pimento
  • 1 can cream of chicken soup
  • 1/2 to 1 pt. sour cream
  • 1 stick oleo, melted
  • 1 pkg. Pepperidge Farm stuffing mix (bread and herb)

Directions

    Mix cooked squash with other ingredients except for the oleo and stuffing mix.

    Melt oleo and mix with stuffing mix.
  3. 3
    Alternate layers of squash mixture and stuffing mixture.

    Save enough stuffing mixture to put on top of casserole.

    Bake in a 350° oven for 30 minutes.
