Squash Casserole

  • 8 to 10 summer squash
  • 6 crackers, crumbled
  • 1/2 stick butter
  • 2 eggs, beaten
  • 1 small onion, minced
  • 1 bell pepper, chopped
  • 1/2 c. grated Longhorn cheese
  • 1/2 c. milk
  • 1 tsp. sugar
  • salt and pepper to taste

Directions

    Slice squash and parboil in salt water until tender; drain and mash well.

    Add cracker crumbs.

    Mix eggs and milk and add to squash.
  4. 4
    Add onion, bell pepper, cheese, butter, sugar, salt and pepper. Put in buttered pan and top with more cracker crumbs.

    Dot with butter.

    Bake at 350° for 1 hour.
