- 8 to 10 summer squash
- 6 crackers, crumbled
- 1/2 stick butter
- 2 eggs, beaten
- 1 small onion, minced
- 1 bell pepper, chopped
- 1/2 c. grated Longhorn cheese
- 1/2 c. milk
- 1 tsp. sugar
- salt and pepper to taste
Directions

1Slice squash and parboil in salt water until tender; drain and mash well.

2Add cracker crumbs.

3Mix eggs and milk and add to squash.

4Add onion, bell pepper, cheese, butter, sugar, salt and pepper. Put in buttered pan and top with more cracker crumbs.

5Dot with butter.

6Bake at 350° for 1 hour.
