- 4 lb. yellow squash, sliced
- 1 medium onion, sliced
- 1 tsp. pepper
- 1 Tbsp. salt
- 1 stick margarine
- 1 pkg. herb seasoned stuffing mix
- 1 small carton sour cream
Directions

1Cook squash and onion in water in saucepan over medium heat about 20 minutes; drain in colander.

2Mash and add pepper, salt, carrots and sour cream.

3Melt margarine, then pour over stuffing mix.

4Mix well.

5Use half the stuffing mix in bottom of casserole dish.

6Pour squash mixture on top of stuffing mix layer.

7Use rest of stuffing mix as top layer.

8Bake at 350° until stuffing mix is lightly browned, about 20 to 25 minutes.
