Squash Casserole

Ingredients

  • 1 1/2 to 2 qt. sliced yellow squash
  • 1 medium onion, chopped
  • 1 stick margarine
  • 1 small box Velveeta cheese, cut cheese in small chunks
  • salt and pepper to taste
  • 8 to 10 crumbled saltines
  • margarine for top

Directions

    Cook squash and onion together until tender.

    Drain and place in a casserole dish.

    Add margarine and Velveeta, salt and pepper. Stir well.

    Top with crumbled saltines and dot with margarine (approximately 1/2 cup).

    Bake at 350° for about 20 to 30 minutes or until cheese melts and crackers brown on top.
