Squash Casserole

Ingredients

  • 4 cups cooked yellow squash
  • 1 cup grated cheese, divided
  • 1 cup Ritz or soda cracker crumbs, divided
  • 1 can cream of mushroom or cream of celery soup
  • 1 onion (yellow or purple, chopped)
  • 1/2 bell pepper or 2 banana peppers
  • 2 eggs, beaten
  • 2 tbsp oleo, melted
  • 1 slice bacon (chopped)
  • salt and pepper

Directions

    Cook bacon slightly, add oleo and melt; add cooked squash, soup, onion, bell pepper, celery, eggs, 1/2 c crackers, and 1/2 c of grated cheese.

    Pour into casserole dish and top with 1/2 c of cracker crumbs and 1/2 c cheese, paprika, few green onions.

    Bake at 400 degrees for 30 minutes.
