Squash Casserole

  • 5 yellow squash
  • instant minced onion
  • 6 Tbsp. oleo
  • 1/3 can Ro-Tel tomatoes
  • 1 c. grated cheese
  • salt and pepper to taste
  • cracker crumbs

Directions

    Slice and cook squash in salted water with instant onion. Drain.

    Add 4 tablespoons oleo, tomatoes, cheese, salt and pepper; stir to blend.

    Pour into buttered casserole dish.

    Melt remaining oleo and pour over casserole and sprinkle with cracker crumbs. Bake at 350° until bubbly, about 30 minutes.

    Will freeze well.
