Squash Casserole

Ingredients

  • 2 pkg. frozen squash or 5 lb. fresh
  • 2 onions, finely chopped
  • 3 Tbsp. flour
  • 1 c. milk
  • 2 eggs
  • 3 Tbsp. melted butter
  • 1 tsp. salt
  • 1/2 tsp. sugar
  • 1/2 lb. grated Cheddar cheese

Directions

    Cook squash, onion and 1/2 cup water until tender.

    Add salt and pepper to taste.

    Cook until all water evaporates.

    Mix flour, milk, eggs, butter, salt, sugar and cheese.

    Stir into squash mixture.

    Pour into greased casserole.

    Bake at 350° about 45 minutes.

    You can add bread crumbs on top if you wish.
