- 1 1/2 to 2 lb. yellow squash
- 1 egg
- 2 to 3 slices bread
- 1/3 to 1/2 stick butter
- 2 c. grated Cheddar cheese
- cracker crumbs (Ritz crackers)
Directions

1Boil squash in salted water until tender.

2Cut bread slices into small pieces.

3Drain squash.

4Add butter and egg; mix well. Add bread crumbs or pieces; mix well.

5Fold cheese into mixture. Bake at 350° for 25 minutes.

6Spread cracker crumbs on top of squash and bake for 5 or 10 more minutes.
