Squash Casserole

  • 1 1/2 to 2 lb. yellow squash
  • 1 egg
  • 2 to 3 slices bread
  • 1/3 to 1/2 stick butter
  • 2 c. grated Cheddar cheese
  • cracker crumbs (Ritz crackers)

Directions

    Boil squash in salted water until tender.

    Cut bread slices into small pieces.

    Drain squash.

    Add butter and egg; mix well. Add bread crumbs or pieces; mix well.

    Fold cheese into mixture. Bake at 350° for 25 minutes.

    Spread cracker crumbs on top of squash and bake for 5 or 10 more minutes.
