Squash Casserole

Ingredients

  • 3 lb. yellow squash
  • 1 c. sour cream
  • 2 cans cream of chicken soup
  • 2 onions, chopped fine
  • 2 medium carrots, grated
  • 1 pkg. corn bread stuffing
  • 1 stick butter

Directions

    Boil squash until tender.

    Mix first 5 ingredients.

    Melt butter and mix with stuffing.

    Put 1/2 in bottom of casserole dish.
  5. 5
    Pour squash into dish and top with remaining stuffing. Bake at 325° for 25 to 30 minutes.
