- 1/4 c. mayonnaise
- 1/4 c. chopped onion
- 1/2 c. cracker crumbs, divided
- 1 egg, beaten
- 1 tsp. sugar
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1 lb. yellow squash, cleaned, boiled and mashed
- 1/4 c. (1 oz.) grated Cheddar cheese
Directions

1Combine mayonnaise, onion, 1/4 cup cracker crumbs, egg, sugar, salt and pepper.

2Add squash; mix well.

3Pour into lightly greased 1-quart casserole.

4Sprinkle remaining cracker crumbs over squash mixture.

5Bake, uncovered, at 350° for 25 to 30 minutes.

6Sprinkle cheese on top.

7Bake an additional 5 minutes or until cheese melts.
