  • 3 yellow squash
  • 2 c. saltine crackers
  • 1 egg, beaten
  • 1 c. milk
  • 3/4 c. margarine
  • 2 c. water
  • 1 chopped onion
  • salt and pepper to taste
  • 1 c. grated Cheddar cheese

Directions

    Cut squash into 1/4-inch slices and boil in water for ten minutes; drain well.

    Melt margarine in 9 x 13 baking dish.

    Crush crackers into crumbs and mix with melted margarine.

    Add squash and remaining ingredients and mix well.

    Cover dish with foil and bake at 350° for 30 minutes.

    Remove foil and sprinkle with cheese and return to oven for 10 minutes to melt cheese.
