- 2 small onions, chopped
- 3 or 4 small yellow summer squash
- salt and pepper to taste
- 1 beaten egg
- 20 Ritz crackers, crumbled
- 1 c. grated Cheddar cheese
- 1 stick margarine
Directions

1Parboil squash until tender.

2Don't cook too long.

3Mix squash, onions, salt, pepper, cheese, egg and crackers; mix lightly with melted margarine.

4Sprinkle 5 or 6 crushed crackers on top.

5Bake 30 minutes or until browned on top and bubbly.
