  • oil for deep frying
  • 1 c. instant pancake mix
  • 3/4 c. milk
  • garlic powder
  • salt and pepper
  • 3 whole chicken breasts, skinned, boned and cut into 1-inch cubes
  • hot mustard or sweet and sour sauce

Directions

    Heat oil in deep fryer to 370°.

    Combine pancake mix and milk in shallow dish.

    Season with garlic powder, salt and pepper.

    Dip chicken pieces in batter, coat well.

    Fry in batches until golden, about 1 minute.

    Drain on paper towels.
