Squash Casserole

  • 2 lb. yellow squash
  • 4 c. butter flavored cracker crumbs
  • 1 lb. grated Cheddar cheese (reserving 1/2 to 1 c. for garnish)
  • 1 small onion, grated
  • 1 c. sour cream
  • 2 eggs, beaten

Directions

    Thinly slice squash.

    Boil in salted water until tender. Drain.

    Mix all ingredients.

    Pour into greased casserole dish. Top with reserved cheese, if desired.

    Bake at 350° for 30 minutes or until bubbly.

    This makes an even better tasting dish when rewarmed the next day.
