- 4 eggs, beaten
- 1/2 c. vegetable oil
- 1 c. biscuit mix
- 1 (4 oz.) can chopped green chilies with juice
- 1 medium onion, chopped
- 1 garlic clove, minced
- 2 c. (8 oz.) shredded Cheddar cheese, divided
- 4 c. coarsely chopped summer squash, zucchini or yellow summer squash
Directions

1Combine eggs, oil and biscuit mix.

2Stir in chilies, onion, garlic and half of the cheese.

3Stir in squash.

4Pour into a greased 13 x 9-inch baking dish.

5Bake at 350° for 40 minutes; sprinkle with remaining cheese and bake 5 minutes more.

6Yields 8 to 10 servings.
