Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1 (8 oz.) pkg. sour cream
  • 1 grated onion
  • 1 grated carrot
  • 1 stick margarine
  • 1 can cream of chicken soup
  • 1/2 (4 oz.) pkg. seasoned bread crumbs (such as Pepperidge Farm)
  • salt and pepper to taste
  • Cheddar cheese, grated (optional)

Directions

    Cut up squash and cook until tender.

    Drain.

    Add sour cream, onion, carrot, margarine (melted), chicken soup and crumbs. Stir together.

    Place in large casserole dish.

    Sprinkle bread crumbs or Cheddar cheese on top.

    Bake at 350° for 30 minutes.

    Yields 10 to 12 servings.
