  • 1 pkg. jalapeno cornbread mix
  • 3 lb. squash, sliced (4 to 6)
  • 4 tsp. oleo
  • 2 eggs
  • 2 c. grated Velveeta
  • 1/2 c. chopped onion
  • 1 Tbsp. sage
  • salt and pepper

Directions

    Cook squash until tender.

    Saute onion in oleo.

    Mix everything together.

    Add squash last.

    Cover with foil and bake at 350° for 35 minutes.

    Remove foil and bake 10 more minutes.
