Squash Casserole

Ingredients

  • 3 sliced yellow squash
  • 1/2 c. onion, chopped
  • 1/4 c. bell pepper, chopped
  • 1 small jar Mexican cheese dip
  • 1 c. crushed crackers
  • 1 egg
  • salt and pepper
  • 2 strips bacon
  • 3/4 c. water
  • 1/2 c. grated cheese

Directions

    Cook squash in water until tender.

    Saute bacon, onion and bell pepper until bacon is crisp.

    Crumble bacon.

    Drain excess water from squash.

    Add all ingredients together and bake in a 2-quart casserole dish for 20 minutes at 350°.

    Sprinkle grated cheese on top.

    Bake 3 to 5 minutes more.
