Squash Casserole

Ingredients

  • 2 lb. yellow squash
  • 1 onion, chopped
  • 1 tsp. salt
  • 1/2 tsp. lemon pepper
  • 1 c. water
  • 2 eggs, beaten
  • 1/2 c. cream or can of evaporated milk
  • 1/4 c. margarine pieces
  • cheese, sliced or grated, to cover top
  • 18 saltine crackers, crushed

Directions

    Simmer squash, onion, salt and pepper until tender.

    Remove from heat.

    Add crackers, cream, margarine and beaten eggs.
  4. 4
    Pour into well buttered casserole dish.
  5. 5
    Bake at 350° for 30 minutes or firm to touch.

    Cover with grated cheese and bake until cheese is melted and lightly browned.
