- 2 lb. yellow squash
- 1 onion, chopped
- 1 tsp. salt
- 1/2 tsp. lemon pepper
- 1 c. water
- 2 eggs, beaten
- 1/2 c. cream or can of evaporated milk
- 1/4 c. margarine pieces
- cheese, sliced or grated, to cover top
- 18 saltine crackers, crushed
Directions

1Simmer squash, onion, salt and pepper until tender.

2Remove from heat.

3Add crackers, cream, margarine and beaten eggs.

4Pour into well buttered casserole dish.

5Bake at 350° for 30 minutes or firm to touch.

6Cover with grated cheese and bake until cheese is melted and lightly browned.
