Ingredients

  • 2 c. cooked summer squash
  • 3/4 stick margarine
  • 2 eggs, beaten
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 c. chopped onion
  • 1 c. shredded cheese
  • 1 c. evaporated milk
  • 2 c. cracker crumbs

Directions

    Mash cooked squash. (Drain squash well after cooking until tender.)

    Add other ingredients and mix well.

    Pour into a greased 1-quart casserole and bake at 375° about 40 minutes.
