Squash Casserole

Ingredients

  • 2 lb. yellow squash, sliced 1/4 inch
  • 2 cans cream of chicken soup
  • 1 tube Ritz or saltine crackers, crushed
  • 1 small onion, diced
  • 1/2 c. sour cream
  • 1/4 c. margarine
  • 1/4 tsp. garlic powder
  • 1/2 tsp. thyme
  • salt and pepper to taste
  • 4 oz. grated Cheddar cheese

Directions

    Steam squash until almost done, then place in large mixing bowl.

    Add all other ingredients, except cheese.

    Mix well.

    Pour mixture into 9 x 13-inch casserole (sprayed with Pam).

    Bake at 350° for 25 minutes or until set.

    Top with grated cheese and bake 5 minutes longer.
