Squash Casserole

Ingredients

  • 2 c. mashed squash
  • 1/4 c. onion, chopped
  • 1/4 c. green pepper, chopped
  • approximately 4 c. sliced squash until makes 2 c. cooked mashed squash
  • 1 can cream of mushroom soup
  • 1/2 c. grated cheese
  • 2 Tbsp. butter or margarine, softened
  • 1/4 c. pimento, chopped

Directions

    Combine squash with salted water and cook until tender.

    Remove from heat, drain well.

    Mash with potato masher.

    Combine remaining ingredients with squash mixture and pour in a greased casserole dish.

    Top with crumbs made with leftover cornbread. Sprinkle with poultry seasoning and onion powder.

    Bake for 30 minutes at 350° until bubbly.
