Ingredients
- 2 c. mashed squash
- 1/4 c. onion, chopped
- 1/4 c. green pepper, chopped
- approximately 4 c. sliced squash until makes 2 c. cooked mashed squash
- 1 can cream of mushroom soup
- 1/2 c. grated cheese
- 2 Tbsp. butter or margarine, softened
- 1/4 c. pimento, chopped
Directions

1Combine squash with salted water and cook until tender.

2Remove from heat, drain well.

3Mash with potato masher.

4Combine remaining ingredients with squash mixture and pour in a greased casserole dish.

5Top with crumbs made with leftover cornbread. Sprinkle with poultry seasoning and onion powder.

6Bake for 30 minutes at 350° until bubbly.
