Squash Casserole

Ingredients

  • 2 lb. (6 c.) yellow squash
  • 1/4 c. chopped onion (1 small)
  • 1/2 c. butter or margarine
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 (8 oz.) pkg. herb seasoned stuffing mix
  • 1 c. shredded carrot (optional)
  • pinch of sugar (optional)

Directions

    Cook sliced squash and chopped onion for 5 minutes.

    Drain. Combine cream of chicken soup and sour cream.

    Stir in shredded carrots, if using, and fold in squash and onion mix.

    Melt butter and add to stuffing.

    Spread half of stuffing mixture in bottom of 11 x 8 x 2-inch or 2-quart baking dish.

    Spoon in vegetable mixture and top with remaining stuffing.

    Bake at 350° for 30 minutes or until hot and bubbly.
