- 2 lb. (6 c.) yellow squash
- 1/4 c. chopped onion (1 small)
- 1/2 c. butter or margarine
- 1 can cream of chicken soup
- 1 c. sour cream
- 1 (8 oz.) pkg. herb seasoned stuffing mix
- 1 c. shredded carrot (optional)
- pinch of sugar (optional)
Directions

1Cook sliced squash and chopped onion for 5 minutes.

2Drain. Combine cream of chicken soup and sour cream.

3Stir in shredded carrots, if using, and fold in squash and onion mix.

4Melt butter and add to stuffing.

5Spread half of stuffing mixture in bottom of 11 x 8 x 2-inch or 2-quart baking dish.

6Spoon in vegetable mixture and top with remaining stuffing.

7Bake at 350° for 30 minutes or until hot and bubbly.
