Squash Casserole

Ingredients

  • 8 medium squash
  • 1 c. bread crumbs or croutons
  • 1 bell pepper, chopped
  • 2 eggs, slightly beaten
  • Salt and pepper to taste
  • 1/2 lb. sausage
  • 2 medium onions, chopped
  • 1 c. tomatoes, canned or fresh
  • 1 can cream of mushroom soup
  • 1 c. shredded cheese

Directions

    Cut squash, boil and drain.

    Brown sausage and drain.

    Mix all together.

    (It's better to do this and let stand in refrigerator overnight.)

    Top with shredded cheese and bake for 1 hour at 350°.
