- 2 lb. yellow summer squash
- salt
- 1 good pinch of sugar
- 1/2 to 3/4 stick margarine
- 1 carton sour cream (small)
- 1 c. sharp Cheddar cheese, cut in small cubes
Directions

1Cook sliced squash in boiling, salted water with a pinch of sugar until really done and tender.

2Drain in colander.

3Put back in pot and add a lot of butter.

4Mash fine with potato masher. Stir in sour cream and cheese.

5Turn into a casserole and bake at 350° for 30 minutes.
