Squash Casserole

Ingredients

  • 2 lb. yellow summer squash
  • salt
  • 1 good pinch of sugar
  • 1/2 to 3/4 stick margarine
  • 1 carton sour cream (small)
  • 1 c. sharp Cheddar cheese, cut in small cubes

Directions

    Cook sliced squash in boiling, salted water with a pinch of sugar until really done and tender.

    Drain in colander.

    Put back in pot and add a lot of butter.

    Mash fine with potato masher. Stir in sour cream and cheese.

    Turn into a casserole and bake at 350° for 30 minutes.
