Squash Casserole

Ingredients

  • 2 to 3 c. cooked squash
  • 1 egg, slightly beaten
  • 1/4 c. margarine, sliced
  • 1/2 c. mayonnaise
  • 1 Tbsp. sugar
  • 1 c. grated Cheddar cheese, divided
  • 1 to 1 1/2 c. cracker crumbs, divided
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. oregano
  • salt and pepper to taste
  • 1 can cream of chicken soup
  • 1 large onion (cooked with squash)

    Preheat oven to 350°.

    In a medium saucepan, boil squash and onion together until tender.

    Drain well.

    In a large bowl, mix squash, egg, margarine, sugar, 1/2 cheese, 1/2 cracker crumbs, soup and seasonings. Mix well.

    Put in buttered 2-quart casserole dish. Top with remaining cheese and crumbs. Bake at 350° for 20 to 30 minutes or until thoroughly heated and bubbly.
