- 2 lb. squash
- 1 carrot, grated
- 1 onion, chopped
- 1 Tbsp. pimento, chopped (optional)
- 1 can cream of chicken soup
- 1 pkg. herb stuffing (Pepperidge Farm)
- 8 oz. sour cream
- 1 stick margarine
Directions

1Cook, drain and mash squash.

2Mix 1/2 package of the stuffing with all ingredients, reserving 1/2 package for topping.

3Place squash mixture in a casserole (2-quart) dish that has been greased and sprinkle the remaining stuffing mix on top.

4Bake at 375° for 25 to 30 minutes.
