Squash Casserole

  • 2 lb. squash
  • 1 carrot, grated
  • 1 onion, chopped
  • 1 Tbsp. pimento, chopped (optional)
  • 1 can cream of chicken soup
  • 1 pkg. herb stuffing (Pepperidge Farm)
  • 8 oz. sour cream
  • 1 stick margarine

Directions

    Cook, drain and mash squash.

    Mix 1/2 package of the stuffing with all ingredients, reserving 1/2 package for topping.

    Place squash mixture in a casserole (2-quart) dish that has been greased and sprinkle the remaining stuffing mix on top.

    Bake at 375° for 25 to 30 minutes.
