Squash Casserole

  • 4 c. cooked squash, drained
  • 1 onion, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 can cream of chicken soup
  • 1 c. sour cream
  • 1 carrot, grated
  • 1 (8 oz.) pkg. Pepperidge Farm herb dressing mix
  • 1 stick oleo

Directions

    Cook squash with salt, pepper and onion.

    Drain well.

    Mix chicken soup and sour cream with squash.

    Add grated carrot to squash mixture.

    Melt oleo in a pan and mix dressing mix in oleo. Pat half in bottom of dish.

    Pour squash mixture on top of dressing crust.

    Sprinkle remainder of dressing mix on top.

    Bake at 350° for 30 minutes.
