Squash Casserole

Ingredients

  • 4 medium yellow squash (about 2 c.)
  • 1/4 c. water
  • 3 slices whole wheat bread, crumbled
  • 1/2 c. (2 1/4 oz.) shredded extra sharp yellow cheese
  • 1/2 tsp. garlic salt
  • 1/8 tsp. paprika
  • 1/2 c. minced onion
  • 1 egg, lightly beaten
  • 1/8 tsp. red pepper
  • 1/2 c. bell pepper

Directions

    Combine squash, onion and water in a 2-quart casserole dish. Cover with lid and microwave on High for 9 to 10 minutes, or until squash is tender, stirring after 4 minutes.

    Mash squash mixture with potato masher.

    Add remaining ingredients (except paprika); stir well and cover.

    Microwave on Medium for 8 to 10 minutes, stirring after 4 minutes.

    Let stand for 5 minutes before serving. Sprinkle with paprika.
