Squash Casserole

  • 8 to 10 yellow squash
  • 1 stick margarine
  • 2 eggs
  • 2 c. grated Cheddar cheese
  • salt and pepper to taste

Directions

    Clean and slice squash.

    Cover with water; cook until tender. Drain well. Return to pan; mash well.

    Add margarine, eggs, cheese, salt and pepper.

    Mash and blend well.

    Pour into casserole dish.

    Bake at 350° for about 25 to 30 minutes or until top is lightly brown.
