- 1/2 c. (1 stick) butter
- 3 c. sliced yellow summer squash (6 small)
- 1 egg
- dash of pepper
- 1/2 c. shredded Swiss cheese
- 1/4 c. milk
- 1 tsp. dry mustard
- 1/4 c. grated cheese
Directions

1Preheat oven to 375°.

2In a large skillet, melt butter.

3Saute squash until tender.

4In a mixing bowl, beat egg slightly.

5Stir in Swiss cheese, milk, salt, mustard and pepper.

6Place squash in 1-quart baking dish.

7Pour egg mixture over and sprinkle with remaining cheese.

8Bake 15 to 20 minutes.

9Makes 4 servings.
